Mornington Peninsula, Victoria, AustraliaThe 2025 Stagiaire blends fruit from Mornington Peninsula's Merricks (35%), Balnarring (25%), Merricks North (30%), and Tuerong (10%). All was whole bunch pressed into 500L puncheons (10% new) for native ferment and 7 months on lees, with partial MLF. Ripe lemon, downy flax, green apple is textured with cracked stones and lit with crystalline lemon, with darts of alluring reduction that wrap around the creamy cashew core, and linger with the saline finish.
