There are usually two picks, a week apart, yielding both fresh and slightly richer fruit for balance. The first is fermented in stainless steel, and the second in oak to add texture. The result is a refreshing, linear, mineral driven Sauvignon Blanc with citrus zest, white grapefruit, nettle, and a saline edge.
