Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing. From the hills of his organic estate vines in Savigny-les-Beaune, and Les Guettottes parcel, this is threaded with flinty reduction, wrapping around green apple, crunchy mirabelle plum, subtle white blossoms, and crushed stones, with great energy to drive this through a long lingering saline finish.
