Savigny-lès-Beaune, Côte de Beaune, Côte d'Or, Burgundy, FrancePascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing. From the hills of his organic estate vines in Savigny-les-Beaune, and Les Guettottes parcel, this is threaded with flinty reduction, wrapping around green apple, crunchy mirabelle plum, subtle white blossoms, and crushed stones, with great energy to drive this through a long lingering saline finish.
