Pascal Clément Bourgogne Côte d'Or Chardonnay 2022
Côte d'Or, Burgundy, FrancePascal Clément, well known for his exceptional white wines, loves using older foudre for his whites, as he feels it brings out the saltiness in the wine. Pascal employs MLF but never bâtonnage on his wines, leaving them on full lees in barrels after pressing. From Savigny-les-Beaune, Chorey-les-Beaune, and Puligny, this was native fermented in foudres, where it was held for a year. This opens with a strike of flint and ample toasted popcorn before bright Meyer lemon, fragrant white blossoms, and a hint of verbena stream through, all gripped with a fine stony spice that finishes saline.
