Jean Collet & Fils Chablis 1er Cru Les Forêts 2023
Chablis, Burgundy, FranceJean Collet started Domaine Collet in 1954, the heir of a Chablis grape-growing family since 1792. It passed down to his son, and how to grandson Romain, in charge of his first vintage at age 21. Romain moved the domaine to native yeast, and organic and biodynamic farming. Les Forêts is on the left bank, on the western side of the Montmains hill, planted in 2008 inside a steeply sloping amphitheatre. It was native fermented with full MLF, and aged for 11 months in concrete egg. Bright lemon, thistle, and verbena glide along the sleek, medium bodied palate, with an ample lees pad, and finely buzzy concrete texture that lingers on a building saline finish.
