Cowichan Valley, Vancouver Island, British Columbia, CanadaFrom the Cowichan Valley on Vancouver Island, the Blue Grouse trad method sparkler is made with fruit from Lakeside and Petrolas Creek, namely a 71/14/13 blend of müller-thurgau, pinot noir, and chardonnay, that spends just over four years en tirage, keeping the bubbles fresh and eventually creamy. The nose is West Coast elusive, with hints of lemon, pear skin, bread dough and citrus rind. The palate is dry and taut, with lemon, pear skin and green apple upfront, and a savoury, parmesan, nutty bubble that finishes with lively acidity and a brush of saline seashore spray.
