Voor Paardeberg, Paarl, Coastal Region, South AfricaFrom the granite soils of Paarl's Voor-Paardeberg (before Paardeberg), where it abuts up against southern Swartland comes this textural verdelho. One of the many, many projects from the mad scientist of wine, Peter Walser, this was named after the trusted Suzuki Jimny, a car that proved itself in the slippery winter muds. This was whole bunch pressed after chilling overnight, and then native fermented in concrete eggs and older French barrels. It rested there 10 months on lees before blending. Layers of green fig, grapefruit peel, fresh green veg, green apple is taut with a buzzy granitic grip, and layered with fine lees, adding volume without weight.
