From red clay and limestone soils, this blend of Cinsault, Grenache, Syrah, and Vermentino were Grapes are harvested at night to keep them cool before a slow, gentle pressing to keep freshness and limit color. It was fermented cool in concrete vats where it rested for 2 to 4 months before bottling. Wild strawberries, pomegranate, crushed florals, and tangerine glide along a sleek, stony palate, with easy acidity taking to a pithy bitter citrus finish.
