Côtes de Provence, Provence, Sud de France, FranceIn a distinctly Provençal specialty shaped bottle, and in a delicate pink hue comes this special Gassier rosé, named after the path the monks took leading to the Croix de Provence, and the altitude (350m) of their estate vineyard. From red clay and limestone soils, this blend of Cinsault, Grenache, Syrah, and Vermentino were Grapes are harvested at night to keep them cool before a slow, gentle pressing to keep freshness and limit color. It was fermented cool in concrete vats where it rested for 2 to 4 months before bottling. Wild strawberries, pomegranate, crushed florals, and tangerine glide along a sleek, stony palate, with easy acidity taking to a pithy bitter citrus finish.
