Evolve Brut Libre 2017
Okanagan Valley, British Columbia, CanadaEvolve Sparkling House is making a splash in Penticton, and it starts with a solid line-up of serious bubbles. The 2017 Brut Libre is predominantly chardonnay (64%) and pinot noir (25%), with the addition of pinot blanc (10%) and riesling (1%) grounding this to the Okanagan. It spent five years on lees, and it's very much about the resulting toasty autolytic character, rounded with dried lemon peel, green apple, and honey. Although technically extra brut (1.8 g/L), the ripeness of fruit gives this more of a classic Brut feel and balance, finishing dry but not austere.
