Evolve Brut Libre 2018
Okanagan Valley, British Columbia, CanadaEvolve Sparkling House is located at the same latitude as the Champagne region, but, with respect, it has not felt the need to be bound by the traditional methods used there. Brut Libre celebrates its freedom by practicing "gentle rebellion," adding small amounts of Okanagan pinot blanc (10%) and ortega (1%) to its 49% chardonnay and 40% pinot noir base. Libre is aged for an impressive 60 months, resulting in multiple layers of flavour and textures led by notes of fresh croissants, citrus, honey, and flecks of candied pineapple that spill onto the palate. The complexity and intensity here elevate it to another level of sparkling wine.
