After fermentation, it briefly ages in neutral puncheons to enhance its texture, then undergoes a second fermentation in the Charmat tank. It displays a lively salmon hue and offers a light, bubbly experience with watermelon, cherry, tangerine, and a touch of bitter citrus in the finish. Okanagan Valley, British Columbia, CanadaThis charmat sparkling rosé blends 56% Chardonnay and 44% Pinot Noir, sourced from Oliver's Secrest Mountain Vineyard, and Skaha Bluffs' Con Vida Vineyard. After a stainless ferment, this moved to neutral puncheons for 3 months of texture building, followed by a stint in the Charmat tank for the second ferment. Pouring a vivid salmon hue, this slight (11%) fizz skips lightly across the palate, with watermelon, tart rhubarb, and tangerine, propelled with soft, barely-there mousse, and finishing with a bitter orange / milk chocolate note.
