Illimis Pinotage 2023
Polkadraai Hills, Stellenbosch, Coastal Region, South Africallimis, meaning clarity in Latin, focuses on producing wines that reflect their origin. It is the passion project of winemaker Lucinda Heyns, who left her wine research position to found the small minimal intervention winery. From 2 vineyards in Stellenbosch's Polkadraai Hills, this pinotage was planted in 1997 and 2013 on the Hills' weathered granites. This was 50% whole bunch, native ferment, and pressed after 8 days on skins, aging in neutral 225L French barrels for 7 months. Crushed florals, wild plum, and summer strawberries float through this pretty, lifted pinotage, a million light years away from the hard press and angry pinotage of past. Tannins are slender and finely sticky, giving a gentle tug that would be welcome with food.
