Darling, Coastal Region, South Africallimis, meaning clarity in Latin, focuses on producing wines that reflect their origin. It is the passion project of winemaker Lucinda Heyns, who left her wine research position to found the small minimal intervention winery. This single vineyard cinsault comes from a 1974 planted bush vine vineyard in Darling, on red loam soils. It was entirely whole bunch, native fermented and pressed after 12 days on skins before aging in neutral 225L French barrels for 7 months. Fragrant raspberry, wild cherry, and perfumed wildflowers leads to a layered, lifted palate of the same, with whisper fine tannins to frame, and guide to a lingering stony, floral finish.
