Lincoln Lakeshore, Niagara Peninsula, Ontario, CanadaJeff Moote is the founder and winemaker at Divergence Wines, a small winery sourcing grapes from great sites around Niagara. This Lincoln Lakeshore white blends 53% sém from Lizak vineyard with 47% sauv blanc off Hughes vineyard. Both were native fermented in used French barrel (partial MLF only on the sém), where they remained 10 months prior to bottling. Tight white blossoms, zippy green apple sail across the sleek palate, with ample energy streaming through a subtle crushed stone finish.
