St David's Bench, Niagara Peninsula, Ontario, CanadaJeff Moote is the founder and winemaker at Divergence Wines, a small winery sourcing grapes from great sites around Niagara. This was equal parts marsanne, roussanne, and viognier from St. David's Bench Bock vineyard, realized once roussanne was added to the list of VQA approved varieties. Each was whole cluster pressed, with the marsanne and roussanne cofermented, and racked into French barrels for fermentation and 10 months aging. Fragrant honeysuckle, apricot, pineapple, and white peach flood a juicy palate, with a waxy base layer, and dusting of jasmine spicing up top. There's a lovely restraint here, allowing the expressive grapes to show their character, but not overwhelm.
