Cave Spring Pinot Gris 2024

Niagara Peninsula, Ontario, CanadaFrom select west Niagara vineyards along the south shore of Lake Ontario, along with 30% Beamsville Bench estate fruit, this pinot gris was tipped with 9% riesling and 7% chardonnay. 50% of the fruit spent 12 hours on skins before pressing, while the remainder was pressed whole berry. The native fermentation occured over 3 weeks primarily in stainless, with 10% in neutral 225L oak barrels, and 50% MLF. All lots aged 6 months sur lie. Subtle pear, apple butter, dish soap is seasoned with light toast, and finishes briefly. I think the addition of the other grapes is detracting from the purity here, leaving something somewhat disjointed.Tasted: 07 November 2025Tasted by: Treve RingPrices:
