Cave Spring Estate Pinot Gris 2022
Beamsville Bench, Niagara Peninsula, Ontario, CanadaFrom their Beamsville Bench Cave Spring Vineyard, these vines (averaging 21 years) is rooted in stony clay till dominant with limestone and dolomite. This had a full day of skin contact before pressing and native ferment, 95% in 2500L oak casks, and 5% in neutral 225L oak barrels. All lots aged for 12 months on lees. Pouring a deep blush hue, thanks to the skin contact, this fuller white rolls along the palate, leaving tangerine, green apple, white pepper in its wake. There's an alluring buzzy underlay giving interest, and upping the food-friendliness of this gris.
