Polkadraai Hills, Stellenbosch, Coastal Region, South AfricaKottabos is a side project of Reenen Borman, 2nd generation winemaker of Boschkloof, his family's property. Kottabos allows him this experimental side, apart from his family's more traditionally styled wines. This comes from 2 Polkadraai Hills vineyards on koffeklip and decomposed granite, and was native fermented, whole cluster, with 5 days on skins before pressing into older 225L oak barrels for 11 months. It rested a short stint in tank before bottling. Under 2000 bottles produced. Fragrant black cherries, tobacco, liquorice, and smoked stones are woven through this medium wine, with fine, branchy tannins, and lifted, easy acidity to carry through the peppery finish.
