Domaine Rolet Coeur de Chardonnay Crémant du Jura 2020
Jura, FranceDuring his presidency of the Société de viticulture du Jura, Pierre Rolet was instrumental in the creation of the AOC Crémant du Jura in 1995. The Coeur de Chardonnay is a selection of the winery's best sparkling lots from Arbois and Côtes du Jura. The wine was whole cluster pressed and fermented at low temperature (18°C) in stainless, with no MLF, and spent a minimum of 40 months on lees, with a dosage of 4 g/L. Green apple, lemon brioche, and fresh bread dough is studded with flake salts, and lingering with shining lemon pith and peel.
