Lincoln Lakeshore, Niagara Peninsula, Ontario, CanadaJeff Moote is the founder and winemaker at Divergence Wines, a small winery sourcing grapes from great sites around Niagara. This Brut Nature blends 60% pinot noir with 40% chardonnay, sourced from Lincoln Lakeshore's Hughes Vineyard. It was fermented in stainless before heading to bottle and 17 months sur lattes. This was disgorged in September 2022. Sharp lemon, fresh and baked green apple, vanilla custard, and wafter sail through the crisp palate, finishing with a wash of salinity.
