Lincoln Lakeshore, Niagara Peninsula, Ontario, CanadaJeff Moote is the founder and winemaker at Divergence Wines, a small winery sourcing grapes from great sites around Niagara. This BdB sources chardonnay from Lincoln Lakeshore's Hughes Vineyard. It was fermented in neutral French oak heading to bottle and 42 months sur lattes, disgorged in October 2024 with 2 g/L. The extended time on lees and oak treatment is evident with the toasty brioche, lemon curd scenting the racy green apple palate, finishing with lingering vanilla wafer.
