Ailm Brut Rosé 2022

West Kelowna, Okanagan Valley, British Columbia, CanadaAilm is a new project from a pioneering family, the Stewart Family, of Quails' Gate. The name Ailm, inspired by the ancient Irish Tree Language known as Ogham, honours the family's heritage and generational connection to horticulture. All the fruit is South Kelowna estate grown, and the Rosé blends 60% pinot noir with 20% pinot meunier and 20% chardonnay, all fermented separately in stainless (full MLF) before bottling and 23 months sur lattes. This was chardonnay disgorged with 8.5 g/L. Perfumed strawberries, crunchy red and green apple, rainier cherry, early rhubarb flood a juicy palate, scented with cherry blossoms, and finishing dry with a mandarin twist.
