West Kelowna, Okanagan Valley, British Columbia, CanadaAilm is a new project from a pioneering family, the Stewart Family, of Quails' Gate. The name Ailm, inspired by the ancient Irish Tree Language known as Ogham, honours the family's heritage and generational connection to horticulture. All the fruit is South Kelowna estate grown, and the Rosé blends 60% pinot noir with 20% pinot meunier and 20% chardonnay, all fermented separately in stainless (full MLF) before bottling and 23 months sur lattes. This was chardonnay disgorged with 8.5 g/L. Perfumed strawberries, crunchy red and green apple, rainier cherry, early rhubarb flood a juicy palate, scented with cherry blossoms, and finishing dry with a mandarin twist. West Kelowna, Okanagan Valley, British Columbia, CanadaThe Brut Rosé presents a subtle light salmon-pink colour with a vibrant, fresh, and floral red berry bouquet. Berry notes and enticing hints of pastry persist throughout the wine, which offers enough body to capture interest while retaining the elegance and sophistication characteristic of all Ailm labels. This wine pairs excellently with sautéed prawns. The final blend comprises 60% Pinot Noir, 20% Pinot Meunier, and 20% Chardonnay. Consistent with the Ailm approach, the base wines are vinified separately in stainless steel, undergo complete malolactic fermentation, and then are matured for 23 months on their lees.
