West Kelowna, Okanagan Valley, British Columbia, CanadaAilm is a new project from a pioneering family, the Stewart Family, of Quails' Gate. The name Ailm, inspired by the ancient Irish Tree Language known as Ogham, honours the family's heritage and generational connection to horticulture. All the fruit is South Kelowna estate grown, and the Brut blends 57% Chardonnay, 33% Pinot Noir, and 10% Pinot Meunier, fermented separately in stainless, with full MLF. Once in bottle this rests en tirage for 24 months before disgorge with 7.5 g/L (of chardonnay). Brisk lemon, ripe green apple, toasted biscuit is kissed with anise and lemon verbena on a sleek frame, with lively mousse and a riffing stony finish.
