Lightfoot and Wolfville Brut 2020
Annapolis Valley, Nova Scotia, CanadaThis L&W Brut is entirely chardonnay, sourced from their organically and biodynamically Lightfoot Home Farm as well as some neighbouring vineyards. Whole cluster fruit was was fermented in stainless steel with full MLF, and once in bottle this aged for 47 months on lees prior to disgorgement in March 2025 with a dosage of 8 g/L. Crisp and racy green and red apple streak across the palate, skipping along a slight meringue pad and leaving a trail of pithy lemon and salinity in its wake.
