British Columbia, CanadaThis traditional method wine blends 70% chardonnay (from 2016) with 30% North Saanich pinot noir (from 2017). The base was native fermented in neutral barrel, and this spent just over 5 years on lees, disgorged February 2025 with zero dosage. Tart and crunchy with subtle orchard fruit, light toast, white grapefruit, and lager-like herbaceousness, along very faint mousse, to a snappy lime pith finish.
