CanadaPale ruby in colour, this gamay was fermented in stainless steel with 85% destemmed fruit and 15% whole clusters, then aged for 6 months in a mix of neutral French oak (81%) and stainless steel (19%). The nose shows smoky tones and a hint of green herbs, layered over baked cherry and subtle dried lavender.
