Cowichan Valley, Vancouver Island, British Columbia, CanadaThe black label signifies a single vineyard, and in this case it's Cowichan Valley's lauded Saison Vineyard and its glacial till soils. The fruit (clones 52, 53) was whole cluster pressed and fermented in 90% stainless, 10% neutral French oak, before resting 4 months on fine lees in stainless. Perfumed pear blossom, yellow apple is kissed with spiced apple butter as it glides along the sleek palate, subtly textured with crushed stones. The finish lingers long after the saline washed last sip.
