The single vineyard bottling is predominantly fermented in stainless steel, with approximately 10% use of neutral French oak. The resulting style is something I describe as coastal electric, pitching a silky texture, subtle lees influence, a vibrant mineral core, and a fresh mid-palate that evokes saline washed stones. This wine pairs well with shellfish dishes, reflecting the principle that what grows together goes together.
