Cowichan Valley, Vancouver Island, British Columbia, CanadaCuvée de l'île has been the flagship of the Unsworth sparkling wine lineup from the start and remains so ahead of their much-anticipated blanc de blancs release. It offers an entirely different profile than their well-known Charmat method, Charme de L'île. This one is made entirely from Pinot Noir estate fruit, with the first fermentation taking place in neutral French barrels before a gentle three-year rest on its lees in the bottle. The style is typically Unsworth—bone dry with vibrant island acidity that provides a lively backdrop to a persistent, creamy mousse. At six years old, this sparkler is only just beginning to show its age, though a subtle softening across the palate now invites one to enjoy the entire bottle at once. I believe West Coast oysters are the perfect pairing, bringing out fresh green-apple and lemon-juice notes, with a squeeze of lime pith and a dusting of hazelnuts.
