Sherry Jerez - Manzanilla, SpainThe history of Bodega Primitivo Collantes dates back to the 19th century, with the arrival of brothers Primitivo and Tomás Collantes to Chiclana de la Frontera. Today, the current Primitivo Collantes is in charge, a young and dynamic member of the new movement of Jerez wines. He oversees the family farm, which spans 55 hectares of vineyards, including the lauded areas of Pozo Galván, Matlián, and El Inglés. Historically, the palomino grape has been associated with Sherry, but these youthful vines, grown on the famed albariza soils, have given the palomino a new direction. At the Matlián winery, it undergoes native fermentation in stainless steel to maintain its vibrant, pure fruit character, and boy, does it deliver. There are plenty of primary fruit aromas to hold you interested, from white stone fruits to intense citrus scents, with a twist of green herbs. From there, the texture and albariza soils take over, providing a masterclass in modern day Spanish white wines that seem miles ahead of the competition.
