Pizzini Attento Pinot Grigio 2024
King Valley, Victoria, AustraliaAttento is an attempt to explore the more complex side of pinot grigio. It starts with a picking regime that begins at 10.5 degrees potential alcohol and runs through 12%. The mix of sugar levels and ripeness helps develop layers of flavour, as does a blend of fermentation techniques that build layers of complexity without sacrificing freshness. The grapes are hand picked from a single vineyard with deep soils of volcanic origins at more than 800 metres above sea level. The crisp, cool environment is key to a long, slow flavour development pattern. The fruit is whole bunch pressed and goes directly to the ferment. The vessels vary from vintage to vintage, but around 50-80% goes into old oak casks and 20-50% into tanks. All of the juice was fortified, dried, and then rested for six months on its lees with regular stirring. The result is an engaging Pinot Grigio style that borders on the Burgundian spectrum, with excellent acidity and refined, creamy textures, with oatmeal and croissant scents. The extra complexity and weight give a gastronomic moniker ready for the dinner table.
