Evolve Pinot Noir 2022
Okanagan Valley, British Columbia, CanadaThe latest Evolve Pinot presents as spicy and mouth-filling up front with plenty of black cherry, baking spice, and forest floor that penetrate the wine from front to back. It's fresh, with moderate alcohol, giving it a consistency of weight and style, and providing a platform for food. The tannins are silky, adding to the finish of this wine. Anything mushroom is a good match here, or a nice piece of soft cheese. The wine is a single site pick from Naramata, destemmed and fermented in open top stainless steel tanks using the labour intensive délestage method. Rather than enhancing extraction, the process promotes a fruitier character, resulting in a softer wine with inviting complexity. Post fermentation, the wine is gently pressed and transferred into French oak barrels (20% new), allowing it to age gracefully for 12 months.
