Post-ferment, it spends 18 months maturing in French and American oak, followed by an additional 12 months in bottle. The result is a lean profile of peppery, red, raw cherry. Skinny and savoury, this wine is best served with high fat dishes to balance its acidity and absorb the fat at the same time.
