Ontario, CanadaA collection of sites contributes to the HoP Baco label. The own rooted vines have been planted over four decades, from 1975 to 2015. The HoP style is generous, aiming to soften some of Baco's less favourable traits of wild, earthy root vegetables. The acidity is prominent, blending with dark plums and oak throughout. It is fresh and rounded, with almost no tannins and a peppery cedar undertone. The wine is typically aged for 6 months in American oak, which helps temper its wild side.
