Chablis, Burgundy, FranceFourth generation vine growers, Romain and Damien Bouchard founded their winemaking estate in 2016 from their family's organic holdings in Chablis, and Chablis 1er and Grand Cru sites. For this, their classic Chablis, fruit comes from the villages of Chablis, La Chapelle Vaupelteigne, Beines, Fontenay, and Villy, and vines up to 50 years. After a native ferment in stainless, this remains there on fine lees for 9 months. Lemon blossom, light cream glides along a river stone base, trailing off with subtle lemon pith and stony spice.
