Navarra and Basque Country, SpainThe Colección 125 Blanco is a selection of fruit from a 480m north facing plot of clay and loam known as Las Mercedes. The site allows for slow ripening and normal alcohol levels. Berries arrive intact at the winery, where they are sorted. The best free run juice is at the heart of this chardonnay, and its barrel fermented in 225 litre French oak barrels for 12 months with the lees in suspension. Some might consider it a bit old style with the honey, nutty notes threading through the citrus and oak, but it’s a gastronomique wine made for food.
