Kacaba Terraced Vineyard Syrah 2021
Niagara Escarpment, Niagara Peninsula, Ontario, CanadaFrom a terraced vineyard on the Kacaba site, this syrah was cold soaked and fermented with 9.3% viognier before inoculation and fermentation. Post ferment, this rests in French and American oak. Tart cassis, bitter cherry, dark cocoa, and spice rule this leaner red, fleshed out some with toast and ripeness, but ultimately framed with pasty tannins to a clipped finish.
