Niagara Peninsula, Ontario, CanadaThe best blocks of chardonnay at HoP's Short Hills Bench estate fall on 3 separate hills, and a mix of silty clays and loam. This was whole cluster pressed and barrel fermented in French barriques and foudres before aging 8 months in barrel. Ripe and creamy, with baked white peach, pear, butter, and barrel spice, with a lemon curd underlay and lemon peel twist on the finish.
