Niagara Peninsula, Ontario, CanadaFour clones (115, 667, 777, 375) from their Short Hills Bench estate's silty clay over loams were destemmed and deseeded (partial seeds added back) and fermented in stainless. Perfumed raspberry, cherry are scented with pipe tobacco, and easily swelled with bright tayberry acidity. Tannins are slightly sticky, but well positioned to handle the fruit, carrying this to a subtle baking spiced finish. Quite smart, and ready for enjoying now.
