Niagara Peninsula, Ontario, CanadaThe Speck Family Reserve Cabernet Merlot blends merlot, cabernet sauvignon, and cabernet franc dating back to 1988 plantings in the Old Farm Block's silty clay soils. Destemmed fruit is partially fermented in a 5000L oak tank before aging in smaller French and American barriques (40% new) for 18 months. Polished blackberry, black cherry, dark earth teems through this structural wine, with long, lightly herbal, and finely sticky tannins housing this to a lingering spiced finish.
