Alsace, FranceThis Demeter certified biodynamic crémant blends 60% pinot auxerrois, 20% pinot gris, 10% pinot blanc, and 10% pinot noir from hillside vineyards of calcareous clays. After 17 months on lees, this was disgorged November 2024 with 4 g/L RS. Tight white blossoms, white peach, honeysuckle stream through the creamy, shining palate, with a sheen of lees and bright acidity through the finish.
