Dry and fresh, it pairs well with clams, oysters, or Brie. Clos du Soleil winemaker Michael Clark sourced his Sauvignon Blanc fruit from Washington's Horse Heaven Hills AVA, aligning it with the Similkameen style. The grapes were harvested by hand at peak ripeness and shipped to Clos du Soleil. The fruit is gently crushed and undergoes four hours of skin contact under dry ice before being pressed, lightly settled, and fermented in stainless steel tanks and French oak puncheons.
