Cave Spring Estate Rosé Brut NV
Beamsville Bench, Niagara Peninsula, Ontario, CanadaOff their Beamsville Bench estate Cave Spring Vineyard, this traditional method rosé brut is off young vine gamay, and entirely from the 2021 vintage (though labelled NV). It was whole cluster pressed and fermented in neutral 225L barrel where it rested 8 months before heading to bottle and 36 months on lees before disgorge with 4 g/L in June 2025. Pouring a pale pink hue, this streaks across a taut palate with early strawberries, raspberry blossoms, pink grapefruit pith above a shimmering stony / saline base that lingers on the tangerine kissed finish.
