Rattlesnake Hills, Columbia Valley, Washington, United StatesSourced from the Zillah Vineyard, Rattlesnake Hills AVA, Yakima Valley, the grapes were fermented whole cluster, partially carbonic and then foot trodden. The juice was then pressed off after seven days to ferment in puncheon and amphora. It spent 5 months in 40% amphora, 40% puncheon, and 20% third fill Hungarian oak. Carbonic maceration tends to lower acidity and produce a noticeably lighter, softer texture on the palate. It is used most notably in some Beaujolais production. The wine is buoyant, light, smooth, and fruity, unlike, a typical California version. Simple, pleasing fresh blackberry, raspberry, loganberry fills the palate, and finishes with some blackberry skin tang.
