The grapes fermented at 12 degrees C for three weeks until dryness. The wine is clean and fresh with that Spearhead purity. Subtle gooseberry and passionfruit mix with grapefruit, lime zest, and some light phenolic notes. The winery likes this with fresh oysters, a Thai green papaya salad, and fresh chèvre or feta cheese.
