One portion is fermented cool in stainless steel, while another goes through a warmer ferment in a neutral French oak barrel with regular lees stirring. The nose is a mix of oranges, apricots, stone fruits and sweet spices. The palate predominantly remains dry, balanced by sufficient acidity that keeps pears and citrus-infused stone fruits fresh. In German cuisine, it pairs well with pork chops, roasted ham, sausages accompanied by sauerkraut, or Wiener Schnitzel.
