Champagne Devaux Grande Reserve Brut NV

Champagne, FranceThe house of Champagne Devaux was founded in 1846 by brothers Jules and Auguste Devaux, based in the Côte des Bar. This is 70% pinot noir, 30% chardonnay, primarily from Montgueux, with smaller amounts from Vitry, Côte des Blancs. Though the base wines were fermented in stainless, this used 25% reserve wines, stored in oak. After around 3 years sur lattes, this was dosed with 9 g/L. Bread dough and cherry brioche lead the cushy palate, with red apple and nougat, tightened with lemon pith and peel, which spirals through the finish.
