Castellare di Castellina Chianti Classico Riserva 2021
Tuscany, ItalyThe '21 Classico Riserva is a nice step up from the Classico, bringing more structure and complexity to the 95/5 mix of sangiovese/canaiolo. I enjoyed the polish and refinement here, and how it adds an exotic five spice note to the flavour profile and its long, silky finish. A vineyard and grape selection of only native vines adds to its authenticity, refreshing the red currant and black licorice. You can drink or hold this one through 2027. Rabbit is a favourite Italian match, but a simple pairing like a piece of Parmigiano Reggiano works too.
