Champagne, FranceA white from whites is my favourite style of champagne, and Collet has no problem getting the style right by pursuing elegance above all other factors. Tiny bubbles, creamy textures, and subtle fruit are the keys to this Blanc de Blancs, made only from chardonnay grown in Premier and Grand Cru vineyards. The tiny bubbles, as mentioned, is a Collet theme that persists from start to finish. The nose is a lemon-lime affair with ginger and toasted almond. The palate is all about balance and finesse, supporting more citrus, pastry, and saline notes with a strong mineral finish, which gives this wine its story. Caviar complements the wine perfectly, taking on the acid and freshness before the finish cleans it away with the next sip.
