Eola-Amity Hills, Willamette Valley, Oregon, United StatesThe bright, juicy, wild raspberry and strawberry aromas grab your attention right out of the gate. The palate is similar, with black cherry and anise, an undercurrent of red currants, and bright acidity. The extras are silky and long-lasting. There is elegance galore before a wisp of saline seals the deal. Grilled salmon, anyone? The fruit is a mix of the Eola-Amity estate, with the remainder picked off nearby vineyards in the AVA. It is a mix of French, Dijon, and Pommard clones that are hand-harvested, sorted, destemmed and fed bin by bin (not pumped) into medium and large-sized stainless steel and cement fermenting tanks. The fermentation is spontaneous with wild yeast. Some 10% of the grapes were not destemmed and went whole-cluster into airtight tanks.
